Similarly, meat should rest for 20 minutes before cutting and a cooling rack can be used to allow meat to rest and cool. Restaurants and bakeries use cooling racks for cooling and temporary storage. The method of cooling baked goods is a convenient place to store baked goods until you serve, frosting or pack. The cooling racks can be many different sizes, usually made of metal. Small metal bars pass through the shelves allowing air to circulate not only on cookies or cakes but can be placed beneath them.
