BBQ Grill and Smoke Cooking
Grill means to grill food over an open flame, direct heat.
Barbecue(BBQ) refers to the indirect cooking of food without direct contact with the open heat
Of course, when we talk about eating BBQ, we may be doing both, but there is no strict distinction.
Smoke cooking is another concept. When we make bacon sausage, we often use smoke, which is a kind of cold smoke. In addition to cold smoke (smoked meat, smoked fish, smoked bacon), Westerners also like hot smoke, especially in Grill and BBQ, in order to make the food more unique flavor, smoke will be added.
The first thing you need a stove to grill or smoke cooking, which can cost anywhere from a few dozen dollars to six or seven hundred dollars. Here, from left to right:
Gas grill, easy to control the heat, convenient, simple, clean, is the grill of choice
Offset smoker, keeping the traditional flavor, preferred for BBQ and charcoal grills
Charcoal grill, can make a small amount of BBQ, can also make charcoal grill.
Water smoker, suitable for low temperature smoke black.
Grill is simple. Fire below, food above. For BBQ, there should be three platforms, the lower layer for fuel, the middle layer for smoke material (if you want to add a water dish to make steam), the upper layer for food, plus a closed box. When I was young, watching my parents cook smoked crab fish at home, I would use a broken casserole pot, put tea leaves, peanut shells, orange peels, and put the fish on a shelf above, and then put it on the stove to smoke, in fact, it is the same reason. As shown in the figure below, the charcoal fire is placed in the lower part of the hearth on the right, and the smoke material is placed on the upper part. The heat and smoke are transferred to the large furnace box. Place the food on a grill in a large oven and blacken it. Most offset smokers are equipped with thermometers and adjustable smoke caps. They can also be cooked directly in a large open fire grill. If you're having trouble controlling the heat with an offset smoker, go for a gas grill, but for a smoky flavor, an offset smoker is a better choice. Gas grill can also be smoked, add an iron basket on the fire, or use aluminum foil box, loaded into the smoker, of course, the smoking effect is not as good as the offset smoker. So, just by looking at the stove in your host's home, you can tell what kind of barbecue the family requires, a little grill, or a little smoke BBQ.
